Recipe Redux Post # 37, Super Easy Slow Cooker BBQ Pulled Chicken


The theme for August Recipe ReDux is “Back To The Dinner Table,” meaning we were challenged to share our healthy recipes that encourage our families to eat dinner all together. One of my favorite things to do on Sundays is throw some ingredients in a slow cooker that transforms them into a delicious dish for our family to enjoy that evening, and also provides leftovers for the start of the week.  This super easy slow cooker bbq chicken is just the ticket.  Just a few simple ingredients to combine together, then set it and forget it for 4 -5 hours and viola, you have got your main dish all ready!  We like to eat this chicken with some corn, simple sautéed kale and a salad.  Then later in the week it is great in tacos, atop salad or in sandwiches. Ingredients:
3 pounds chicken breasts
2 cups BBQ sauce (we love Trader Joe's Carolina Gold)
1 cup low sodium chicken or vegetable broth
2 teaspoons brown sugar
Directions:
Add all the ingredients to large slow cooker  and cook on low for 4- 4.5 hours. Break up chicken with fork to shred and then cook for another 30 minutes.
 Makes 8 cups, 14 servings

no way!! literally just took out my weeks worth of chicken from the crock pot because I make meals like this! MMMMM.
